In Colorado, we love great beef. And as a result, there are a lot of steakhouses that serve the need. But for Cadillac Ranch, we knew that they were serving up a unique helping of Colorado authenticity. They were Levi meets Ralph Lauren, and we sought to embrace their casual-but-chic Western persona. Most importantly, they demonstrated an unabashed culinary eccentricity for delivering only quality, grass-fed, pure 100% Angus beef. And that’s the story we told—Cowboy style.
